- 1 lb chicken breast, finely chopped

- 1 cup broccoli, grated
- 1 cup mozzarella cheese, shredded
- 1 tsp salt
- 1/2 tsp black pepper

Combine ingredients
Add the finely chopped chicken, eggs, grated broccoli, shredded mozzarella, salt, and black pepper into a large ziplock bag.

Mix the batter
Seal the bag and massage everything together until all ingredients are well combined.

Heat the pan
Heat vegetable oil in a large skillet over medium heat.

Form and fry fritters
Spoon the mixture into the hot pan, forming patties. Fry until golden brown on the bottom, about 4-5 minutes per side.

Flip and finish
Flip the fritters and cook until browned on the other side and the chicken is cooked through.

Transfer to a plate lined with fresh lettuce and serve hot while the cheese is still melty.
Using a ziplock bag makes mixing and cleanup easy. For extra crispiness, press the fritters flat with a spatula while cooking.
