- 2 heads broccoli
- 2 eggs, beaten
- 1 cup shredded mozzarella cheese (for crust)
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese (for topping)
- 12 slices pepperoni
- red pepper flakes, for garnish

1
Steam the broccoli
Place broccoli heads in a steamer basket over boiling water. Cover and steam until tender, about 8-10 minutes.
-
2
Chop and dry the broccoli
Transfer steamed broccoli to a cutting board and chop into very small pieces. Place in a clean kitchen towel and wring out as much moisture as possible.
-
3
Make the crust mixture
In a large bowl, combine the chopped broccoli, beaten eggs, 1 cup mozzarella cheese, minced garlic, chopped parsley, dried oregano, garlic powder, Parmesan cheese, salt, and pepper. Mix until well combined.
-
4
Form and bake the crust
Preheat oven to 400°F (200°C). Line a baking pan with parchment paper. Transfer the broccoli mixture to the pan and spread into an even layer, pressing down firmly to form the crust. Bake for 25 minutes until golden and set.

5
Add toppings and finish baking
Remove crust from oven and top with remaining mozzarella cheese and pepperoni slices. Return to oven and bake for an additional 10 minutes until cheese is melted and bubbly.
-
6
Garnish and serve
Remove from oven, sprinkle with red pepper flakes and fresh parsley. Cut into squares and serve immediately.
Make sure to thoroughly wring out the broccoli to ensure a crispy crust. You can customize toppings with your favorites. For a vegetarian version, simply omit the pepperoni.
