- 2 cups cottage cheese
- 2 large eggs
- 1/2 cup cocoa powder
- 1/2 cup sugar or sweetener
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking powder
-
1
Preheat oven
Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
-
2
Blend wet ingredients
Add cottage cheese and eggs to a blender. Blend until completely smooth with no curds remaining.
-
3
Add dry ingredients
Add cocoa powder, sugar, vanilla extract, salt, and baking powder to the blender. Blend again until the batter is smooth and well combined.
-
4
Pour into pan
Pour the chocolate batter into the prepared baking pan. Use a spoon to spread it evenly and smooth the top.
-
5
Bake
Bake in the preheated oven for 22-25 minutes, or until the top is set and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
-
6
Cool and slice
Allow the brownies to cool completely in the pan before slicing into 9 squares. The texture improves as they cool.
For extra fudgy brownies, slightly underbake them. These brownies are high in protein from the cottage cheese and taste best when chilled. Store in the refrigerator for up to 5 days.
